Bulgarian cuisine is unknown outside the Balkans. Within this small country tucked away in SE Europe is a wealth of healthy, wholesome and economical dishes steeped in tradition and based upon a heaven's eden of fresh local produce grown there. Having spent much time now living and working Bulgaria over the years I have collected many recipes that have been tried and tested. What has been found is a distinctive and untapped taste of a country that is considered the breadbasket of not just Eastern Europe but the whole of Europe.
